Oat & Banana Pancake Recipe

Blueberry pancake

Breakfast is an important part of the day and there are SO many ways we can make it nutritious and delicious! Pancakes have always been a favourite for Gus in the morning as a small child and it’s nice to throw in some extra special extras to keep his vitamins and minerals boosted! Now he's grown into a Cacao porridge lover, which reminds me, I must share that recipe with you soon.

INGREDIENTS

x1 egg

1/2 cup oats

x1 ripe banana

1/4 flax mix (Linwoods)

1/2 cup milk

1/2 cup flour (we use organic rice/buckwheat flour instead of plain)

x10-15 blueberries OR raisins

1/2 tsp coconut oil





RECIPE

  1. Add the oats and the egg into a bowl or jug, mix and stir thoroughly.

  2. Now add the banana and mash with a fork into the mixture, stir through.

  3. Add the flax seed mix and the milk. Stirring as you go!

  4. Stir in the flour, the mixture will be thick (dare I say sloppy) it will be chunky and not the nice pouring consistency you often have for pancakes!

  5. Finally stir in the blueberries or raisins and set aside.

  6. On a low heat melt the coconut oil in a frying pan. VERY little oil is needed, sometimes it’s good to oil the pan and quickly swish around a little kitchen roll in the pan to take out excess.

  7. As the pan heats stir the mixture once more, if you feel like it needs a little more milk do add some!

  8. Literally ‘dollop’ x3 small burger sized blobs in the pan and allow to cook. They will firm and turn a nice golden brown, turning a few times but being mindful not to mess to much.

  9. Pile on the plate and drizzle a little agave nectar for sweetness!

  10. Enjoy!
