Baked Blueberries Oat Pudding



INGREDIENTS

x1 cup oats (not instant)

x1 1/3 cup yogurt

x2 tbsp maple syrup (or agave nectar)

x1 tsp vanilla extract

coconut sugar

x1 large handful blueberries




RECIPE

  1. Preheat the oven to 180.c

  2. Place the oats in a clean bowl, they don't need to be soaked or cooked! Just as is!

  3. Add the egg, and vanilla essence and stir through.

  4. Stir in the maple syrup and yogurt.

  5. Add your handful of blueberries and mix through!

  6. Scoop all of the wonderful mix into a small baking tray (or two little dishes)

  7. Top with coconut sugar (I added almond flakes too!)

  8. Bake in the oven for 30 minutes.

  9. Once cooked enjoy straight out the oven!



It's another simple recipe that might become a favourite! I would be mindful of the choice of yogurt, we use St Helens Goats Milk Yogurt which if you know goats yogurt it has an aquired taste! So find a yogurt that you enjoy on its own before throwing it in this!
